Why does the temperature of a liquid that is at its boiling point remain constant when more energy is added to the liquid

This is so as the heat energy gained is used to break the forces of attraction between the liquid particles. Hence the average kinetic energy of the liquid particles remain constant during this change of state, causing the temperature to be constant even though heat is gained throughout this process.
