What was the difference between the Paleolithic and Mesolithic People?

The main differences are that Paleolithic people lived in caves in nomadic hunter/gatherer societies, while Mesolithic and Neolithic people saw the birth of nations thanks to agricultural developments. The groups of people stopped being approximately 20 in size and people started living together on a larger scale.
